For me, one of the fondest things about the Christmas season is watching the excitement of kids. I love watching them anxiously await the approach of Christmas and the overwhelming joy on Christmas, when they unwrap their gifts.

As a special gift to all my visitors, I would like to share with you my family’s favorite Christmas desert.
Each year my family always looks forward to my Easy Lemon Delight Dessert on Christmas. Several years ago, a very good friend of mine gave me this recipe. She told me that sometimes the recipe goes by the name Eat It Til’ It’s Gone.
Does your family love lemon goody sweets? Then definitely consider giving the dessert a try. But if lemon is not a favorite in your family’s taste palette, simply switch the pudding flavor to another selection. Three other pudding flavors I have tried are vanilla, butter pecan and chocolate. But lemon is traditionally my family’s favorite.
I love easy, when it comes to cooking and baking. This is one reason I enjoy making this desert for my family. When my friend gave me the dessert, she told me it is so easy to make that you simply can’t mess it up.
After eating a large meal, such as Christmas dinner, a light dessert seems to work best. The Easy Lemon Delight Recipe, aka Eat It Til It’s Gone, is a really delicious dessert that goes well after a heavy meal.
Favorite Family Christmas Dessert: Easy Lemon Delight Recipe
Bottom layer of dessert: 1/2 cup margarine (or 1 stick); 1 Cup flour; 1/2 cup chopped nuts. Simply mix these ingredient together and press into the bottom of a 9 x 13 pan. Bake for 15 minutes at 350 degrees and then cool.
Next layer of dessert: 1 (8 ounce package) plus 1 (3 ounce package) of cream cheese; approximately 1/2 cup to 1 cup of Cool Whip topping; 1 cup of powered sugar. Mix these ingredients together, until the texture is fluffy and creamy. Then place the mixture on top of the cool crust. I buy the larger size of Cool Whip and normally use 1 cup of Cool Whip in this step.
Next layer of dessert: 3 boxes of instant lemon pudding (be sure the pudding mix is instant); 4 1/3 cup of milk. Mix the pudding with the milk. Typically, I mix it with a hand mixer for about 2 – 3 minutes, until it starts to thicken. Then pour mixture over the layer of cream cheese.
Top layer of dessert: Simply place the remainder of the Cool Whip onto the top of the dessert.
